If you're enjoying a breakfast tailgate, you'll want to offer your guests some variation of cooked potato.  These home fries are sure to please everyone, and are easy to make.

Time Required:  1-2 hours

Skill Required:  Minimal cooking skills needed

Ingredients:

Lots of potatoes, either redskin or small baking potatoes

About one onion for every 8-10 potatoes (just eye it up - tailgate cooking is not exact)

Butter or margarine

Mexican or Southwest seasoning

Salt, pepper, and garlic

Roast beef pan (basically a cookie sheet with two-inch-high sides); this is excellent for cooking on the grill and can be thrown out if gets destroyed because its cheap

Steps:

Cut the potatoes into bite-sized chunks.

Boil enough water to cover the potatoes.

Cook the potatoes until tender, about 15 minutes.

Cut the onion into small slices, and put the potatoes and onion into a zip-lock bag.  Keep refrigerated until you get to the tailgate.

Once at the tailgate, put the roast beef pan on the grill and melt butter in it.  Add the potatoes & onions, and season with a tremendous amount of Mexican or Southwest seasoning.  Each potato should be coated.  Also add salt, pepper, and garlic to taste.  Keep adding butter to keep the potatoes moist.

Be careful while cooking, as the pan becomes very hot.  Keep stirring the potatoes, while trying not to break them up.

When they look done, they're done.  Remember, you're really just heating them since they are already cooked through.

Serve with other breakfast food (no ketchup allowed!)
