Fatty (Stuffed Grilled Meatloaf)

The perfect tailgating food. With so many options can be made to suit anyones taste. The choices are endless
in the type of sausage you use and also in the filling. You can go from spicy with hot sausage and a jalapeno mixture to
sweet with maple sausage and an apple one. There is nothing better than firing up the grill before watching the Tigers play..
You can use a smoker or grill with indirect heat. Grill at 225 to 250 degrees for 2-3 hours depending on the size of
the one you make. Here is the recipe for one of my favorites:

Ingredients:

1-2 lbs.- Jimmy Dean Ground Sausage
1/2 cup- chopped onion
1/2 cup- red, yellow, and green bell pepper
1/2 cup -chopped mushrooms
1/2 cup -chopped cilantro
1- 8 oz. block pepper jack cheese(sliced or cut thin)
5-8 slices of bacon
wax paper,aluminum foil, and pam

Spray wax paper with pam. Lay out sausage and spread out until 1/4" thick. Start putting your ingredients in middle
starting with the cheese, onion, bell peppers, and mushrooms. Sprinkle cilantro over it. Roll up all sides of sausage and make a loaf. Make sure to
press together good so none of the cheese will escape while grilling. It should resemble a meatloaf now. Now you can either wrap it
with the bacon or just layer the top with the slices. Whichever is easier. I find that putting it on top is. It is now ready to go on the grill.
Put the Fatty on aluminum foil and grill at 225 to 250 degrees for 2-3 hours. The more sausage you use the longer it will take. Grill
until internal temperature is 165 degrees. After taking it off of grill let rest 5 or 10 minutes to let cheese harden a bit or it will run out when slicing.
