Black Bean Salad

This is, without a doubt, the EASIEST salad I have ever made, essentially six ingredients, mixed together at once.

Don’t let the feta cheese and mint fool you. They do exceptionally well as a compliment to the beans.

Also, don’t hesitate to bring this to a tailgate party. Serve this alongside your burgers, brats or ribs, rather than some tired old potato salad or coleslaw!

Ingredients:

· 2 cans precooked black beans, rinsed thoroughly

· 1 small red onion, finely chopped

· ½ cup finely chopped fresh mint

· 2 ounces crumbled feta cheese

· 2 tablespoons extra virgin olive oil

· 3 to 4 tablespoons fresh lemon juice

· Salt and freshly ground black pepper to taste

Directions:

· Combine the beans, onion, mint and most of the cheese in a bowl.

· (Reserve a few tablespoons of cheese for garnish.)

· Add the olive oil, lemon juice, salt and pepper, and mix well.

· Let the beans marinate for 10 minutes and toss again

· Correct the seasoning before serving, adding salt and lemon juice to taste

· Garnish with reserved feta and mint sprigs
